  • Who knew there was so much you could do with maple?

One of the goals of The Maple Project - an interdisciplinary collaboration between the University of Rhode Island and the Food Innovation Nexus, a Johnson & Wales University-funded startup housed on their Providence campus, was to showcase just that and #FramState Food Science major Morgan Failla got to be a part of the project.

"Maple was such a great ingredient to explore because it’s not only a low glycemic, wild sweetener but also a functional, flexible material making it easy to be implemented in a variety of products," Morgan said. "While our final products were able to spread the knowledge of maple beyond just being a pancake topping, they were also representative of our teams’ strengths and abilities."

Morgan was paired up with JWU Providence Culinary Arts student Katie DeVries and together they developed an ice cream geared toward elderly patients that would not only taste good, but would also be nutritionally beneficial. Check out a behind the scenes video here:

  • If you think of maple as an ingredient at all, there’s a high probability that your first thought is to envision it in syrup form, drizzled liberally over pancakes. Earlier this summer, the Maple Project set out to change that. Six summer interns, including our very own Morgan Failla (Food Science '21) were chosen to create innovative new product designs that unlock unexpected aspects of the familiar ingredient. • “My family immigrated to the United States from Brazil. I was able to get regular ESL in school, but my parents did not have that opportunity. It can be very lonely for immigrants in the community. I remember how much my ESL education helped me to make friends," said Ana Luisa Asmar, one of nine Framingham State students selected to participate in the #MilleniumFellowship; a semester-long development program to expand awareness and access to English language programs for immigrants.

Students from 1,209 campuses across 135 nations applied for this year's fellowship, but only 69 campuses in 16 nations were selected to participate.
